Does transferring apps from an iPhone to iTunes also transfer the contents of the apps?

I'm trying to update an old iPhone to retrieve photos from a app that won't open. I have everything set up and have successfully transferred all my apps to iTunes; I'm just double checking that transferring apps from the iPhone means the apps and all their data/contents and not just the app alone. Like I don't want to update the IPhone, find I still have the app, but without all the photos I had stored in it.
