Water and stains proofing mexican pine table

We have a lovely Mexican pine kitchen table. To protect it, we have always covered it with a wax tablecloth. We would prefer to not have to use a cover on this lovely table but we are worried about "ring" stains left from glasses/cups/ spillages etc.
How do we treat the table top to achieve adequate protection from stains/marks etc ??
