When a company sells of some of their assets, what is that called?

I do believe the term you're looking for is liquidation. They liquidate their assets for profit.

I raised same question in seminar held by Universal Wealth Preservation, they gave answer like, Assets are presented on the balance sheet in order of their liquidity. It shows the business assets and liabilities at one point in time and is sometimes referred to as the "snap shot".
