What happens when your under-insured policy is equal to the at fault driver's policy limit?

For example, the at fault drivers policy limit is 100k per person, 300k per accident. The settlement offered was 100k, and the person offering the settlement acknowledged that this was no where near enough for the extent of the injuries.

My own insurance has an under-insured policy equal to 100k. Can I then work out a settlement with my own policy through my insurance company? Thanks for any assistance regarding this.
