Deep frying

I'm new at deep frying. We just got a nice one. My problem is-I've tried twice to make doughtnuts and once they swelled and where undercooked even though the outside was VERY browned. The second time they cooked fine but fell apartinto pieces when removing them. dough? I can find lots of reciepies, but no detailed instructions.

Well for starters, to get a more even cooking, fry them at a lower temperature. This way you can cook them for longer and the inside will cook properly. As for falling apart, kneed the dough more, you might be getting air bubbles, or use less water in the dough.
