Why do diabetics inject insulin before they eat?

Because almost all foods contain a certain amount of sugar, even like salad and mashed potatoes, so by injecting insulin before eating, they prevent themselves from having a, well, I don't actually know the term for when a diabetic is overloading on sugar, but basically to prevent themselves from dying.
