It is practically not possible to measure each and every gram of food for its protein fat and carb content. So choose food with unsaturated fatty acids, as this will not add to the fat accumulation but on the other hand will take care of the fat requirements of the body. There wil not be any problem in consuming proteins as they are eliminated from the body when consumed in excess. As far as carb is considered avoid foods with higher glycemic index (higher than 70). Hence fish will be the best food. Meat without any fat will be good. Healthful diet provides the right balance of carbs, fat and protein:
40-50% of calories from carbs
25-35% of calories from protein
20-30% of calories from fat.

This diet is considered low-fat moderate-carbs diet. It is also commonly called "balanced diet"

If you reduce your intake of carbs to about 30% and increase your consumption of protein accordingly, your diet will be considered low-carb diet, which is good for short term weight loss (up to one year).
